First step towards nethali thokku is cleaning the dry fish. Use rock salt and a little water in a pot and just rince the fish all the dirt will come out.
Cut two large onions and add to the pan with a little hot oil.
Add some salt, this will help to soften the onions faster. Don't add too much as the fish already has salt in it.
Then roast a large tomato on the stove to peel the silk.
this is the easiest technique. You can also boil it in water for a while and then peel the skin. I like this method as it's not time consuming.
Since my tomato was large I just cut small pieces straight into the pan with a knife.
Then it's time to add the dry fish. I prefer to add them at this stage so it has some extra cooking time as my husband likes softer flesh.
Add the spices. I spoon of chilli powder, half spoon cumin powder and a quarter spoon turmeric powder.
Lower the flame and let it cook for 5 to 10 minutes. Garnish it with some coriander leaves. I dint have any in my storage so just left it plain.
